My Cook Box – November 2018: Vegetarian Recipes Box

My Cook Box is a great way to make delicious meals at home, using fresh ingredients. The way that it works is that you choose three recipes from their online menu (which changes every week) and then they deliver everything that you need all together in one box, straight to your door. Delivery is free too! All of the ingredients are carefully portioned out for you so that there’s no food waste, and any meat/dairy/chilled items, are suitably packaged with ice packs and insulation to keep them chilled until you put them into the fridge.

The subscriptions to My Cook Box are fully flexible so, for example, if you have a busy week of going out ahead, you can skip that week’s delivery and then restart it from your online account for the week after.

The recipes have been created to be as simple as possible with each one having a set of easy to follow instructions, so it’s perfect for beginners and those who are looking for some new cooking inspiration!

I love cooking and was curious to see what recipes My Cook Box would have available for a vegetarian like myself, so to give you an idea of what to expect, they kindly sent me a box to try out.

Here’s what I found inside:-

Recipe 1 – Pan Fried Broccoli and Feta Toss with Bulghur Wheat and Flaked Almonds

The first recipe was for a tasty Bulghur Wheat based dish with Broccoli, Feta and Almonds. I love all of these foods so I knew I was going to like it! To make it, I received the following ingredients:-

  • Pack of Flaked Almonds
  • 1 Red Onion
  • 1 Red Chilli
  • Sachet of Balsamic Vinegar
  • Sachet of Honey
  • Pack of Feta Cheese
  • Vegetable Stock Powder
  • Pack of Bulghur Wheat
  • 1 Broccoli
  • 1 Garlic
  • Pack of fresh Flat Leaf Parsley

The end result! I was very surprised by how generous the portion size was and it was a really filling, comforting and tasty meal. I added extra Chilli to mine as I like it hot, and it was easier than I thought to whip it all together – it only took around 25 minutes in total to make this meal for two people. The balance of all the different flavours was absolutely spot on and I’d definitely make this again!

Recipe 2 – Lentil & Mushroom Shepherds Pie with Cheesy Mash

I love making vegetarian cottage pies during Winter because they are so comforting to eat when it’s cold outside, and I was intrigued by this second recipe as it uses lentils which isn’t something that I’ve tried in my own pies before. For this dish, My Cook Box included the following:-

  • 2 large Potatoes
  • 1 Red Onion
  • 1 pack of Green Beans
  • 1 tin of Lentils
  • 1 pack of pre-sliced Mushrooms
  • Dried Thyme
  • Sachet of Tomato Puree
  • Vegetable Stock Powder
  • 2 mini packs of Cheddar Cheese

Again, this dish made two very generous sized portions and was super tasty and filling! The recipe was easy to follow and I’d say that it took roughly 35-40 minutes to make which is about the same time that my own veggie cottage pie dishes take. The lentils were a really good addition and an excellent source of plant-based protein, so I will certainly be trying them in more dishes like this in the future. If I made this again, I would probably add more tomato puree and make a gravy to go with it, but it was very good!

Recipe 3 – Sag Paneer with Ginger Rice

The third and final recipe in the My Cook Box was for Sag Paneer which is something that I often order to take-out from my local Indian restaurant. I received the following ingredients to make it:-

  • 1 Onion
  • 1 pack of Vine Tomatoes
  • 1 Garlic
  • 1 piece of Ginger
  • 1 pack of Paneer
  • 1 pack of Baby Spinach
  • Vegetable Stock Powder
  • 1 small pack of Tilda Basmati Rice
  • Garam Masala
  • Turmeric

This dish was incredibly easy to do and took around 30 minutes. As you can see again in the above picture, the portion sizes are huge. There wasn’t any Chilli in the original recipe, so I added some from my own fridge as I prefer Indian food to be as spicy as possible, but that’s, of course, a personal preference! I was very impressed by this – the paneer cooked beautifully and there was just enough sauce to be able to lightly coat everything together on the plate. Yum!

I enjoyed every aspect of My Cook Box and would definitely recommend them to friends and family. The meals were all very easy to make, and super delicious, plus the portion sizes were generous and filling. The quality of the ingredients was excellent too and it was very convenient having everything delivered together so that there were no emergency trips to the shops. Brilliant!
